Home made energy bars – now gluten free!

These are sugar bombs, but they do give you energy – and they’re preservative-free:

  1. 2 2/3 cups old fashioned oats OR 1 2/3 cups old fashioned oats + 1 cup of toasted steel cut oats – crunchy and yummy!
  2. 1 cup organic shredded unsweetened coconut
  3. 1/2 cup plus 1 TB whole wheat flour coconut meal
  4. 6 TB bleached wheat flour (I guess this is binder) almond flour
  5. 1 C sesame seeds
  6. 1/2 c brown sugar
  7. 1/4 2 tsp cinnamon (c’mon, 1/4 tsp? what’s that  about?)
  8. 1 1/2 tsp salt (I use none)
  9. 1/3 cup nonfat powdered milk (I use a little more)
  10. 1/2 c vegetable oil – I use peanut oil.
  11. 3/4 c honey
  12. 2 tsp vanilla extract or almond extract. (My favorite is almond – yum)

Optional – add some nuts, seeds and/or dried berries of your liking. Too many, and the bars will crumble. Then just call it granola!

Pre-Toast Oats – Place the steel-cut oats in a preheated 300 degree oven for approximately 20 minutes. Return the oats to a tightly covered container, storing in a cool place. Toasted oats cook in half the time.

Heat oven to 325. Mix the dry ingredients. Put the veg oil in a 2C measure; add the honey. I microwave the wet stuff for 60 sec to make mixing easy. Pour all wet ingredients into the dry ingredients and mix. I find my Kitchen Aid mixer a big help. Pour and squash the mix into a parchment-lined 9×13 pan. The bars should be roughly 1/2 inch thick.

Don’t skip the parchment or you’ll be busy with a chisel. I’ve done the experiment, so you don’t have to.

Cook for 30 mins, cut into 16-32 bars while warm and package.

Keep frozen as, being real food, there are no preservatives and they will turn stale. If you have a vacuum sealer, that would be helpful too.
